Produce high quality extra virgin olive oils (nutraceutical, genuine / natural, bio-dynamic Demeter) from olives only by its own olive groves, it costs a lot. Our extra virgin olive oils, inevitably, come out on the market with high-end prices and are not available at large retailers. The higher production costs mean respect for the environment, respect for employees, respect for the health of us farmers and consumers.

One of the most
awarded and talked about olive oils in Italy, and certainly one of the
very best oils you will ever taste. Costa Dei Trabocchi is
an ultra-premium organic olive oil produced in a strictly limited
edition in hand-numbered bottles by Tenuta Zimarino Masseria Don
Vincenzo, on the Trabocchi Coast, in the Abruzza region of Italy. It is
used in some of the most prestigious five-star hotels around the world,
as well as by famous Michelin and Gault-Millau starred chefs in Italy
and elsewhere, due to its superior depth of taste and quality of its
health properties. Produced using Gentile di Chieti olives, it has an appealing delicious taste. After an hour of tasting you will still have the taste buds with the scent of olive oil.
It is made using the highest possible standards of cultivation and
production in biodynamic agriculture, a sustainable method of organic farming that
emphasises the holistic development and harmony of relationships
between the soil, native vegetation and cultivars within and around the
farm, creating not only the most natural olive oil environment, but a
wildlife oasis. The olives are hand picked and pressed within a maximum
of 10 hours. No chemical products or fertilisers are used in any of the
stages of production, making this one very special oil amongst few
around the world. Scientific research by the Department of Chemistry of
the Polytechnic of Milan has confirmed this olive oil reaches a much
higher than average level of proteins and polyphenols - the healthy
stuff olive oils are famous for. Tenuta Zimarino consistently have their
oils tested by the Polytechnic every four months to guarantee their
organoleptic and taste profiles continue to be of the very highest order
in the world. A must have for any connoisseur, it is presented in a
hand-crafted solid pine wood case, also making it a perfect luxury
gourmet gift.
Tasting notes: It's
fruity, grassy character evokes hints of almond, artichoke and tomato.
With impressive and well balanced structure it tastes initially sweet
yet offers spicy and slightly bitter sensations on the palate, is
harmonious and of medium intensity. A lovely sweet but strong tasting
oil that will surprise the most demanding palates. Lovely if tasted raw
with bread.
