Costa dei Trabocchi, EVOO in purity grand cru - Organic and Biodynamic Demeter




Extra virgin olive oil organic and biodynamic Demeter obtained usign the only olives of the Gentile di Chieti variety, a typical and native Abruzzi cultivar.

Its intense fruity, herbaceous type, shows off olfactory power and complexity, reminding us of a mowed lawn.

Harmonious and fine evoo that evokes hints of almond, artichoke and green banana, with pleasant spicy and bitter notes of strong intensity.

Culinary pairing: beluga caviar, ossietra and svruga, smoked salmon, vegetable soup, grilled meats, aged cheeses, seafood, oysters. Perfect with raspberry ice cream.

Gesundheit aus der Natur. Bio Olivenöl-Manufaktur Zimarino durch KüchenRock


Culinary Travel à la KüchenRock begeistert, verbindet – es ist schön so von ganz besonderen Manufakturen zu erfahren. So ging es mir mit der Bio-Olivenöl-Manufaktur Zimarino, die extra vergine, biologisches Olivenöl von einer herrlichen Güte produziert. Nachdem ich das Olivenöl probiert hatte, wollte ich mehr über die Entstehung der Farm, der Philosophie und dem Anbau von Oliven wissen. Tenuta Zimarino lädt uns auf eine Entdeckungsreise auf seine Farm durch das wunderbare Interview ein.
 Seit wann gibt es Ihre Olivenöl-Manufaktur?  
“Masseria Don Vincenzo“ hat seinen Ursprung im Jahr 1700. Der Urgroßvater Donato ZIMARINO hatte ein großes Stück Land entlang des Küstenstreifens gekauft. Heute erstreckt sich das Gut vom Kap Punta Aderci bis zum Sinello Fluss. Dieser Bereich wurde damals Contrada Zimarino genannt. Später, nachdem das Land von dem Großvater Don Vincenzo vermessen war, nannte man es „Masseria Don Vincenzo“.  Heute heißt es „Tenuta Zimarino Masseria Don Vincenzo“, da inzwischen auf dem fruchtbaren Land eine große Farm entstanden ist. 
 KüchenRock   Geradezu harmonisch und malerisch ist die Lage des Anwesens. Zwischen Wald, Olivenbäumen und Weinbergen hat man das Gefühl eine Oase des Glücks, gefunden zu haben. Hier ist die Zeit stehen geblieben. Eine besondere Art von Luxus!
Im Herbst kann man die Farm zur Olivenernte besuchen. Ein herrliches Vergnügen aus selbst geernteten Oliven sein hochwertiges Olivenöl mit nach Hause nehmen zu können. Das kann ich wirklich empfehlen.





Liliana ZIMARINO baute ab 1975 das inzwischen stets wachsende Familienunternehmen im Bereich des Olivenöls, kostbaren Acetos und der besonderen Weine mit Herz und Verstand aus. Ihr Können wurde ihr von ihrer Familie, erfahrenen Bauern, sozusagen in die Wiege gelegt. Mit viel Liebe, Zeit und Geduld hat sie dafür gesorgt, dass die ursprünglichen Baumarten und einheimischen Pflanzenarten (Gentile di Chieti, Ascolana Tenera und Nebbio di Chieti) auf dem Land wuchsen. Eine biodynamische Landwirtschaft und ein echtes Lebenswerk wuchs heran!
 KüchenRock   Wie ich das schreibe und wieder lese, geht mir das Herz auf, denn genau das sind Geschichten, die mich als Autorin – falsch – als Mensch – berühren. Die Familie Zimarino entführt ein Stück weit in die Welt der Manufaktur-Macher. Danke! Ja, genau diese Dinge erden uns in der Zeit der Hektik. Wer mich ein wenig besser kennt weiß, dass ich selbst mit meiner Familie eine kleine Olivenplantage pflege und einen Fabel für das flüssige Gold der Olive habe. Nun aber zurück zum Olivenöl der Farm „Tenuta Zimarino Masseria Don Vincenzo“.

 Wie hat sich die Manufaktur entwickelt? 
Zunächst wurde das native Olivenöl nur für die Familie, Freunde und Verwandte hergestellt. Mit der Zeit sprach sich herum, dass das Olivenöl von besonderer Güte ist und immer mehr Menschen wollten es kaufen. Ein echtes Geschäftsfeld entstand und entwickelte sich. Von Zeit zu Zeit entwickelten wir das Olivenöl immer weiter. Es entstanden unterschiedliche Öle mit unterschiedlichen Aromen bei denen wir bis heute stets großen Wert auf die Reinheit legen. 
KüchenRock  Geht es Ihnen wie mir? Das ZIMARINO Öl gibt es heute in besten Restaurants weltweit und man legt größten Wert auf das geschätzte Olivenöl. Ich selbst nehme es gerne zum Salat oder auch zu einem frisch gebackenen Brot. Phantastisch! Eine Vision trägt Flügel und mit Einsatz wird der Erfolg belohnt. Nach der Schweiz und Österreich erobert das ZIMARINO Öl nun Deutschland. Danke!





 Wo stehen all Ihre Olivenbäume? Wo produzieren Sie das edle Olivenöl?  
Unser Olivenhain befindet sich in der Stadt Vasto in den Abruzzen, im Naturschutzgebiet von Punta Aderci an der Costa Trabocchi. Heute besteht er aus 2584 Pflanzen, befindet sich auf einer Holozäner alluvialer Terrasse, die sich durch Lehm und Kalkboden kennzeichnet, und atmet die frischen Seebrisen, die die Oliven vor Beschädigungen durch Ungeziefer schützen. © Foto: Zimarino

Der Küstenstreifen, der sich zwischen dem Sinello Fluss und der Hafenstadt Vasto befindet, zeichnet sich durch Klippen mit einer Höhe von 15 bis weit über 25 Metern aus. Das wunderbare Bild wird durch die langen Kiesel-Strände abgerundet.
 KüchenRock   Ich folge der Familie Zimarino auch auf Instagram und freue mich stets Bild für Bild ein Stück weit an ihrem Leben teil nehmen zu dürfen. Einige KüchenRocker folgen auch bereits. Vielleicht sehen wir uns 2018 zur Ernte.
Wie beim guten Wein ist auch für die besonders guten Oliven die Bodenbeschaffenheit von Bedeutung. 
 Was kann man zu der Bodenbeschaffenheit sagen? 
Der Boden um den Hof besteht aus Ton. Er ist frei von Steinen und kann Wasser besonders gut speichern. Für die hervorragende Fruchtbarkeit des Bodens sorgt der hohe Gehalt an Kohlenstoff. Das gute Klima verhindert Wärmeschocks, sorgt für eine optimale Belüftung und ermöglicht jedes Jahr eine gute Ernte. Der Tonboden begünstigt die Bildung von Frucht- und Aroma-Stoffen.
 KüchenRock  Das Olivenöl ist sehr aromatisch und zählt zu den feinen Ölen. Geschmack ist eine persönliche Empfindung. Für mich ist das Olivenöl weich im Geschmack, trägt keine Bitterstoffe und schmeckt durch die dezente Schärfe spannend.



 An was erkennt man ein echtes Bio-Olivenöl?  
Die „I BIO Zimarino“ sind biologische und biodynamische native Olivenöle und wurden extra auch von Demeter zertifiziert. Die Olivenöle von Zimarino sind biologisch! 
 KüchenRock  Das Etikett zertifiziert das biodynamische OlivenÖl. So weiß man, dass das Produkt das man kauft, alle Richtlinien des ökologischen Landbaus erfüllt und den Demeter-Standards entspricht, die weitaus restriktiver als die Standards des ökologischen Landbaus sind. 
Die Zimarino Olivenöle sind mehrfach ausgezeichnet worden.
 Zu was empfehlen Sie das „per Liliana grand cru“? Ich finde es ist geschmacklich ein Juwel unter ihren Olivenölen und verwende es selbst nur zu besonderen Salaten, gerne zu Brot und Antipasti. 

Das native Olivenöl extra „Per Liliana“, reinsorting aus Ascolana Tenera, grand cru, ist eine leichte Fruchtigkeit mit einem Hauch von Tomatenblättern und Grasschnitt. Es steht für den ausgewogenen Geschmack, ist angenehm für die Gaumen und bieten eine Reihe von Aromen – von süß bis bitter – mit einer würzigen Spitze. Es ist besonders für die leichte Küche geeignet, vor allem für Fisch. 
Ideal ist es auch zu Meeresfrüchte Vorspeisen, Meeresfrüchten in jeglicher Variation, gegrilltem Fisch, Dinkel- und Gerstegerichten, Salaten, weißem Fleisch, Frischkäse, Blauschimmelkäse, Ziegenkäse, Ricotta und feinem Gebäck.
